The wine from Comté Tolosan produce by Domaine Bellevue La Forêt, spreads
across vast terraces situated between the Garonne and Tarn rivers as you leave
the town via the right bank.

Soil made up of alluvial deposits and gravel : favourable to wines with character.

100% Cabernet Franc
WWIINNEEMMAAKKIINNGG
The fermentation temperatures (28 - 30°C), as well as the pumping-over vary
depending upon the tannins and the fruit. Following malolactic fermentation, a
mixed addition of oxygen using micro-bubbles stabilises the colour and adds
suppleness to the tannins. The wine is then analysed, tasted and bottled.

Cherry colour with a purple disc.
Ripe nose, notes of wisteria, plum jam, frangipani and clove.
Velvet and melted on the palate with a note of raspberry jam, fresh and crunchy
with good persistence.
If carefully stocked can be aged for 4 to 6 years.

Rabbit terrine, stuffed vegetables, mustard-based rabbit, Valençay cheese, pears
with wine.
