YIELD : � The vineyard’s production is limited when the berries set and by green harvesting
before veraison.
� It is brought down to maximum yield of 40 hl/ha.
WINE MAKING : � Measurement of the anthocyanins and grape tasting determine when the fruit are
fully ripened and ready to be picked.
� Each variety is vinified separately according to Bordeaux winemaking practices.
� Fermentation temperatures are carefully regulated between 28 and 30°C depending
upon the variety.
� Each vat is individually pumped over in view of capturing subtle and noble
tannins.
� Vatting period : approximately 1 month.
� Micro-oxygenation immediately after alcoholic fermentation.
� Blending.
� Around 60% of the wine is aged for 12 to 15 months, 1/3 in new oak barrels,
1/3in one-year-old oak barrels and 1/3 in two-year-old oak barrels.
TASTING NOTES : � Extremely dark garnet colour.
� Melted nose evoking bitter dark cocoa, black currant and blackberry, spicy cumin
and Cinnamon.
� Good freshness on the palate, harmony, joined by liquorice and black pepper,
with resin on the finish.
� This age-worthy wine (up to 9 or 10 years), at once fleshy, ample, straight forward
and refined, benefiting from a long finish, is ready , is ready to drink now.
� Best decanted 2 hours before serving at 18°C.
PAIRING : � Roast beef, beef and mushroom pie, tournedos with pepper, veal with morel
mushrooms, Brie or Cantal cheese.
